Recipe: Mrs. S’s Cranberry Crunch

I’m Allen Silkin, digital director at Gingrich 360. The following recipes are from the volumes of cookbooks of the beloved “Mrs. S,” my wife. Many of these dishes have been transported (very carefully) up and down the eastern seaboard during the holidays. Mrs S’s recipes are so delicious that they defy science: even putting weight on individuals during the Passover holiday.

Cranberry Crunch

Ingredients:

Crust

  • ½ cup flour
  • 1 cup old fashioned oats
  • 1 stick margarine, softened
  • ½ cup brown sugar, firmly packed

Filling

  • 1 can whole cranberries, drained
  • 1 can pineapple tidbits, drained
  • 1 teaspoon cinnamon

Preheat oven to 350 degrees.

Mix together ingredients for the crust until a ball forms.

Set aside 1/3 to put on the top.

Spread the other 2/3 of crust into the bottom and sides of a glass dish (grease first, if desired)

In a separate bowl, mix the filling ingredients. Pour into crust.

Crumble the remaining crust on top of the filling.

Bake 1 hour until it starts to bubble.

Can be served warm or cold.
