Recipe: Debbie’s Cast Iron Skillet Pecan Brownies

I am Debbie Myers, president and CEO of Gingrich 360. Thanksgiving is my favorite holiday (especially with family), and brownies with pecans or walnuts are my favorite dessert.

 

 

 

 

Debbie’s Cast Iron Skillet Pecan Brownies

Ingredients:

  • 1 cup sugar
  • 3 eggs
  • 1 tsp. pure vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 tsp. salt
  • 1/2 stick unsalted butter
  • 1/4 cup heavy cream
  • 8 oz. semi-sweet chocolate, roughly chopped
  • 1/2 cup pecans, roughly chopped

Preheat the oven to 350 degrees. In a small bowl, whisk together the sugar, eggs, and vanilla. In another small bowl, whisk together the flour, cocoa powder and salt.

Add the butter, heavy cream and chocolate to a cast iron skillet, or ovenproof skillet, and set over medium-low heat. Cook, stirring constantly, until the chocolate has melted, Remove the skillet from the heat and allow to cool slightly.

Slowly add the sugar mixture to the chocolate mixture, whisking until combined. Fold in the flour mixture, then the pecans.

Bake for 40 minutes, or until a cake tester inserted into the center of the brownies comes out clean. Serve the brownies from the skillet, warm or at room temperature. Top with a scoop of ice cream, if desired.
